If you are stuck on a great Valentine’s gift idea, sometimes taking charge of dinner plans and making something mouth-watering is the best way to show how much you care. Try this beautiful cast-iron steak recipe from our February magazine for a Valentine’s Day for the record books.

Ingredients

2 x 8oz. Striploin steaks, well-marbled

6 cloves Fresh garlic

2 sprigs Fresh rosemary

2 tbsp Butter

1 tbsp Kosher salt

1 tsp Ground black pepper

4 cups Baby yellow potatoes, skin on

¼ cup Extra light olive oil

1 tbsp Garlic powder

1-2 tsp Salt

1 tsp Pepper

1 head Romaine lettuce

¼ cup Grated parmesan cheese

3 strips Bacon, crumbled

1 cup Croutons of choice

1 cup Hellman’s mayonnaise

1 tbsp Lemon juice

1 tbsp Parmesan cheese

1-2 tsp Salt

1 tsp Ground black pepper

1 bottle Cabernet Sauvignon

Tips:

☝️Leave steaks at room temp for 1 hour prior to cooking.

☝️Preheat the cast iron pan to searing hot prior to placing the steak in the pan.

☝️Wine should be aerated, and steaks should be allowed to rest 15+ minutes after coming out of the pan before serving.

1. Preheat oven to 450°. Boil the potatoes and allow them to cool. Using a baking sheet lined with parchment paper, add half the olive oil and all potatoes together on the pan. Smash the potatoes down with a glass cup as flat as possible. Drizzle with the remaining oil, salt, pepper, and garlic powder. Place in oven for 20-25 minutes, depending on preferred level of crispiness.

2. Place 1 tbsp butter into the cast-iron pan with the rosemary and garlic cloves. Salt the steaks generously on both sides and quickly place them into the cast iron pan. Sear the steak off while drizzling the butter drippings over the steaks as they cook, flipping them only once. It will take about 3-4 minutes per side for a 1” steak, cooked medium-rare.

3. Chop up lettuce and mix with bacon and parmesan cheese in a large bowl; mix mayo, lemon juice, Parmesan, salt, and pepper together in a small

bowl. Split in half and use half for salad dressing and half for drizzling over crispy smashed potatoes.

4. Mix salad together, adding dressing and croutons.

5. Plate as desired, pour some wine, and enjoy your meal!
