This delicious recipe can be made in bulk, keeps beautifully for about a week (if it lasts that long), and gets more flavourful by the day. It is a lunchtime favourite around here! 😋
Ingredients:
• 6 ears of corn
• 1 onion - minced
• 2 tbsp butter
• 1 tsp olive oil
• ½ tsp black pepper
• 1 tsp sea salt
• ½ tsp cayenne powder
• 1 tsp chili powder
• ½ tbsp garlic powder
• 1 tbsp sour cream
• 1 tbsp mayonnaise
Optional
• 2 tbsp fresh cilantro
• 1 tsp lime juice
Enhancement
• 2 cups white rice
• ¼ cup sesame sauce
Instructions:
1. Cook corn by boiling or grilling on the cob.
2. In a large saucepan, add butter and diced onion over medium-low heat until onions turn clear.
3. In a large bowl, combine onion with all remaining ingredients, except cilantro and lime, and mix well.
4. Remove corn kernels from cob and add to saucepan with 1 tsp olive oil. Grill corn kernels until lightly browned and add to the rest of the mixture.
5. Add lime and cilantro at this time, if desired.
Optional Enhancement:
1. Cook the rice and add that and the sesame sauce to the rest of the mixture.
